Easy Weekend Egg Muffins

I love the versatility of eggs. There are numerous ways to prepare them and anything goes! From adding them raw in protein shakes, to a variety of cooked possibilities, they are the ultimate food that can be enjoyed for breakfast, lunch, dinner and as snacks.

 

 

But, taking the time in the morning to prepare egg recipes that the whole family will enjoy can be challenging. So in an effort to simplify the morning chaos, I like making these egg muffins to accommodate everyone’s egg preferences.

Here’s how you can make them too.

 

Ingredients

♦ 6 eggs

♦ 1/2 cup frozen hashbrowns (cubed)

♦ 1/2 cup chopped green pepper

♦ 1/2 cup chopped ham

♦ Grated cheddar cheese

♦ Salt & pepper to taste

Instructions

Pre-heat oven to 325°F.

Spray bottom of tin muffin tray with cooking spray.

Add 4-5 hash browns in the bottom of each muffin cup.

Crack one egg in each muffin cup or whisk eggs in a bowl and distribute the egg mixture evenly in the muffin cups.

Add chopped green pepper and ham on top.

Top with cheese.

Bake for 15-20 minutes.

Remove from muffin tray while still warm.

Whether your family members like their eggs runny or hard, plain or packed with vegetables, you can make large quantities of individualized egg muffins and keep everyone happy.

You can also make extras to keep as leftovers. They can be easily microwaved on hectic weekday mornings for a quick healthy breakfast.

Have You Tried Fiddleheads?

I’ll be honest, I had never heard of fiddleheads until I moved to Nova Scotia. I would see them every spring in the produce aisle of the grocery store, but just kept on walking by and hadn’t purchased them, until now. I finally decided to try them and see what this seasonal delicacy is all about.

Quick Overview

Fiddleheads are edible ferns. They are immature fern fronds harvested in spring, during the early stage of their development when they are tightly coiled and resemble a fiddle’s scroll (the upper end of the instrument), hence the name fiddlehead.

It only takes a few days before the fronds start to unravel and the plant develops into a mature fern.

There are many varieties of ferns, but the ones harvested on the East coast are the ostrich ferns, which fan out to resemble ostrich feathers once fully grown.

Nutritional Value

Fiddleheads offer a lot of nutritional value.

They are rich in

  • omega-3 fatty acids
  • omega-6 fatty acids
  • vitamin A
  • vitamin C
  • potassium
  • iron
  • fibre

Safety Precautions

Not all wild ferns are edible. Some types are toxic. Although ostrich ferns can easily be spotted in woodlands, unless you can identify them with absolute certainty, best not to harvest them yourself.

Even edible fiddleheads can cause food poisoning when eaten raw or undercooked.

Always cut browned ends, remove the husk, rinse thoroughly and then boil or steam the fiddleheads for at least 10 minutes before using them in recipes!

Even if you plan on sautéing them, cooking them, frying them, incorporating them in a soup recipe, adding them in a salad or in a smoothieALWAYS boil or steam them first! And NEVER eat them raw!

Fiddleheads can be stored in the fridge for up to two weeks.

You can also freeze them and enjoy them year-round. Simply boil or steam first, then blanch, dry and place in freezer bags.

Some grocery stores carry them in the frozen section too.

Easy Recipes

1. Fiddlehead Salad

Fiddleheads have a unique taste. In order to enjoy their full flavour try eating them as a salad. Delicious!

  • Rinse a handful of fiddleheads thoroughly
  • Boil or steam for 10 minutes
  • Drain
  • Blanch for 2 minutes
  • Drizzle with 2 tbsp of olive oil
  • Add 1 tsp fresh squeezed lemon juice
  • Season with salt & pepper

2. Fiddlehead Omelette

You can really get creative when it comes to cooking with fiddleheads. For example, you can incorporate them in your breakfast.

  • Rinse a handful of fiddleheads thoroughly
  • Boil or steam for 10 minutes
  • Drain
  • Blanch for 2 minutes
  • Sauté fiddleheads in 1 tbsp butter, for 1 minute
  • Add 4 whisked eggs over top
  • Cook until ready
  • Top with bacon bits and cheese
  • Season with salt & pepper

3. Fried Fiddleheads With Sweet Hummus Sauce

For picky eaters… this recipe is sure to please.

  • Rinse a handful of fiddleheads thoroughly
  • Boil or steam for 10 minutes
  • Drain
  • Blanch for 2 minutes
  • Beat 1 egg
  • Dip the fiddleheads in egg one by one
  • Coat them with breadcrumbs
  • Fry fiddleheads for 2 minutes in hot oil
  • Place on paper towel to remove excess oil
  • Serve with sweet hummus sauce

Sweet hummus sauce

  • 1/2 cup hummus
  • 1 tbsp honey
  • Mix hummus and honey together until smooth

Here’s my recipe (no baking required)

🌼 Ingredients

•1 cup rolled oats
•1/4 cup pumpkin seeds
•1/4 cup raisins •1/4 cup dried cranberries
•1/4 cup slithered almonds
•2 tbsp sunflower seeds
•1 tbsp sesame seeds
•3/4 honey
•1 tsp vegetable oil

🌼 Instructions:

•Combine all dry ingredients in a bowl
•Mix honey and oil together
•Pour honey and oil mixture to the dry ingredients
•Mix well until blended nicely
•Add mixture in a pan lined with parchment paper
•Press down firmly
•Refrigerate overnight
•Cut the granola bars into desired shape (side note: since these are not baked you’ll have to store them in the fridge to maintain their shape)

Chocolate Filled Puff Pastry Hearts

Frozen puff pastry is such an inexpensive and practical hack that can be used to make quite impressive desserts. I love how these chocolate filled heart pastries turned out. They are delicious and super easy to make. Try making them for Valentine’s Day. Here’s what you will need…

Ingredients:

1 box of puff pastry

1 cup chocolate spread

heart-shaped cookie cutter

icing sugar (optional)

PC butter puff pastry crunchy chocolate hazelnut spread

Instructions:

Preheat oven to 375 degrees

Thaw puff pastry according to package directions

Unwrap one of the pastry sheet on a flat surface, but keep the parchment paper beneath it

Spread the chocolate spread evenly onto the sheet

Unroll the second sheet, remove it from the parchment paper and place it over the chocolate

Use the cookie cutters to cut out the hearts

Remove the excess pastry surrounding the heart cutouts

Gently transfer parchment paper with heart cutouts on a cookie sheet

Bake for 15 minutes or until golden

Cool completely

Sprinkle with icing sugar

Chocolate Covered Football Chips

Chocolate covered potato chips are such a delight and easy to make.  If you are a football fan, then this is a great little treat for football nights and any Super Bowl party.

The Lay’s Poppables chips can be conveniently turned into little footballs with a bit of milk chocolate and white icing.

Here’s how…

Ingredients:

1 bag of Lay’s Sea Salt Poppables chips

300g milk chocolate chips

1 tube of white decorating icing

Instructions:

Melt chocolate chips using a double broiler

Add the Poppables in the chocolate and mix until covered completely

Remove the chips one by one with a toothpick and line them up on a plate

Refrigerate for 20 minutes to allow for the chocolate to set

Pipe white icing on top of chips to create the football laces

No Fail Fluffy Pancake Recipe

Making the perfect pancakes can be a bit challenging. The key is a really good recipe.
So, here’s my foolproof family recipe for fluffy pancakes.




Ingredients

1 cup flour
1 tsp sugar
1/2 tsp baking soda
1 tsp baking powder
1/8 tsp salt
1 cup milk
1 tbsp white vinegar
1 egg
1 tsp vanilla
1 tbsp vegetable oil

Instructions

Mix dry ingredients together in a large bowl
Add milk, vinegar, egg, vanilla and oil to dry ingredients
Whisk until the batter is smooth
Heat non-stick griddle or non-stick frying pan on medium heat
Pour 1/4 cup batter for each pancake
Cook until bubbles form on the top side (about 2 minutes), then flip and cook the other side
Serve warm with maple syrup and fruit.

Pumpkin Pie Hack

 

Making pumpkin pie from scratch might be a challenge sometimes, especially if you are focusing all your energy into preparing a turkey and multiple side dishes. So here’s a fullproof way to upgrade a plain store-bought pie into your own creation in less than 5 minutes!

 

Here’s what you’ll need…

Ingredients:

♦ 1/4 melted butter

♦ 1/4 brown sugar

♦ 1/4 maple syrup

♦ 1 1/2 cups chopped walnuts

Side note: You can substitute the maple syrup with honey and the walnuts with pecans.

Instructions:

♦ Stir all ingredients together.

♦ Pour mixture on top of pie.

♦ Decorate the pie rim with whip cream florets.

Salmon and Haddock Fish Cakes

This is a wonderful weekend recipe that can be made with fresh or leftover fish in no time. A delicious alternative to crab cakes for those who suffer from seafood allergies.

 

 

 

Ingredients

♦ 1 cup smoked salmon
I like using pepper smoked Atlantic salmon

♦ 1 cup cooked haddock
(bought fresh-frozen and boiled for 5 minutes, or leftover cooked haddock)

♦ 1 cup breadcrumbs

♦ 2 eggs

♦ 1/4 cup chopped green onions

♦ 4 tbsp vegetable oil or margarine

Instructions

In a bowl, flake the fish with a fork (or fingers)

Add breadcrumbs, eggs and onions

Mix well together

Form small fish patties in the palm of your hand

Heat oil or melt butter in a frying pan

Fry fish cakes on medium heat for 2 minutes on each side, until golden brown

Remove from heat and place on paper towel to drain excess oil

Serve with creamy tartar sauce

Homemade Halloween Chocolate Candy

Celebrate Halloween this year by making your own spooky chocolate candy.

A simple way to do this is to use Halloween themed silicone ice trays as chocolate moulds.

The recipe for these melt-in-your-mouth treats requires only two ingredients: chocolate and sweetened condensed milk! All other add-ins are optional.

 

Here’s what you’ll need:

Materials

◊ Halloween themed ice trays (I found these ice trays at the Superstore for $2.00!)

◊ Parchment paper (or wax paper)

Ingredients

◊ 1 cup semi-sweet chocolate chips (or milk chocolate chips)

◊ 1/2 cup butterscotch chips

◊ 1/2 cup white chocolate chips

◊ 1 can sweetened condensed milk

◊ White icing (for decoration, optional)

◊ 1/4 cup red glace cherries, a.k.a candied cherries (optional)

 

Instructions

To make plain chocolates, prepare the semi-sweet chocolate chip mixture. For the marble chocolates, prepare two separate mixtures of your choice.

 

For the semi-sweet chocolate mixture

♦ In a medium glass bowl or glass measuring cup, combine the semi-sweet chocolate chips with 1/2 cup condensed milk.

♦ Microwave for 30-45 seconds, until bubbly.

♦ Mix with a spoon. Place bowl or measuring in a bowl containing hot water, in order to prevent the mixture from hardening.

For the butterscotch mixture

In a small glass bowl, combine the butterscotch chips with 1/4 cup condensed milk.

Microwave for 20-30 seconds, until bubbly.

Mix with a spoon. Place container in a bowl half-full of hot water, in order to prevent the mixture from hardening.

 

For the white chocolate mixture

In a small glass bowl, combine the white chocolate chips with 1/4 cup condensed milk.

Microwave for 20-30 seconds, until bubbly.

Mix with a spoon. Place container in a bowl half-full of hot water, in order to prevent the mixture from hardening.

♦ Spray a thin layer of cooking spray inside each mold to prevent the chocolate from sticking to the silicone.

♦ Add a small amount of white chocolate mixture in the bottom of the mould.

♦ Add a bit of semi-sweet chocolate mixture on top

♦ Insert the cherries

♦ Add a dollop of the chocolate mixture on top to cover the cherries.

♦ Place a piece of parchment paper (or wax paper) over top and press down firmly to allow for the mixture to penetrate the creases of the mould shape at the very bottom.

♦ Slide the back of a butter knife over the parchment paper to remove any remaining bubbles at the top of the mould.

♦ Slowly remove the parchment paper.

♦ Carefully remove overflowing mixture from the sides.

♦ Place in refrigerator.

♦ Let set for 3 hours or overnight.

♦ Gently pop the chocolates out of the mould.

Making the spiders & spider web chocolate candy

Using the same technique as shown above, fill the web candies.

Add a bit of butterscotch in the spider moulds to highlight the insect.

For an added touch, decorate the chocolates with icing, by tracing some of the details of the candy, as shown here with the spider webs.

Easy Buttermilk Turkey Meatballs

Let’s start with the turkey meatballs…

It’s always fun to switch things up a bit and re-vamp old family recipes.

These melt-in-your-mouth meatballs are delicious and can be served alone, as a side dish or simply enjoyed as a snack.

The secret is adding buttermilk to the recipe. This simple step makes the meatballs ever so tender and kids love them!

Ingredients

450g ground turkey

2 cups breadcrumbs (1 cup for the mixture and 1 cup to coat the meatballs)

1 egg

1/2 can chickpeas, ground in food processor to form a paste (optional)

1/2 cup buttermilk
(side note: because buttermilk is expensive, I substitute with 1/2 milk and 1 tsp white vinegar)

1/4 tsp of ground allspice
(or substitute with a dash of each of the following ground spices: cinnamon, nutmeg and cloves)

1/4 tsp salt

1/4 tsp pepper

1 tsp garlic powder

1 tsp onion powder

3 tbsp of vegetable oil

1 cup of chicken broth

 

Instructions

Mix ground turkey, 1 cup of breadcrumbs, egg, buttermilk and spices in a bowl.

I like incorporating extra protein in our meals, which is why I add the chickpea paste in the mixture… great trick for picky eaters too 🙂

Form small round balls.

Coat each meatball with breadcrumbs, on a plate.

In a frying pan, heat 3 tbsp of vegetable oil.

Reduce to medium heat.

Add meatballs and cook for 3 minutes, then rotate to cook them on the other side for another 3 minutes.

Add chicken broth to the pan.

Cover and cook for 5 minutes, or until most of the broth has been absorbed by the meatballs.

Remove from heat.

Let cool and serve as desired. You can also freeze the meatballs at this point and eat them at a later time.

I like placing the meatballs on skewers with cheese and veggies as a quick after school snack.
