Brownstone Cafe Beet Salad

This recipe was inspired by our love of beets. From their color to their richness in vitamins and minerals, beets are very versatile and a must have on any menu. Hope this recipe will inspire you to make beets a regular item in your diet.
1lb boiled beets, skinned and chopped into ¾ inch cubes
1 small carrot julienned
2 stalks green onion thinly sliced
¼ cup honey balsamic dressing (see below)
½ cup crumbled feta
Honey Balsamic Dressing
1/4 cup balsamic
1/4 cup honey
1/4 tbsp Dijon
1/2 tbsp minced garlic
1/4 tsp pepper
1/2 tbsp lemon juice
3 cups canola oil
3/4 cups olive oil
Put all ingredients in blender.
Blend until smooth.
Mix all ingredients and enjoy!!
